Kopytka / Kittens / Potato dumplings


I love these things. They taste delicious, and it requires barely anything to make. Truly a poor-man's meal... which honestly right now is probably a good thing


Kopytka:
2 cups cooked, mashed potatoes
2 large eggs
1 1/2 cups flour
2 tablespoons oil
Dash of baking powder
1 large spoonful of butter/margerine
Garlic cloves - as many as you want
Salt, pepper, any other seasoning you want

Prep:
Boil the potatoes until soft and mashable. You may leave the peel on, as long as it can be mashed well. Puree the garlic cloves. Season with a few dashes of salt and pepper, and about one garlic clove worth of the puree. Mash all ingredients except the remaining garlic and butter together by hand, until thick like dough. Should be quite sticky. Roll into small, oval dumplings. I usually do about an inch wide and an inch and a half long. Keep a bowl of water beside you, and wet your hands every few dumplings to keep the sticking down. Add a little flour to the dough if it starts getting too liquidy. Oiling your rest surface between the rolling and the boiling can't hurt either.

Cooking:
Boil water and add a splash of oil. Boil dumplings until they float to the surface. Drain water, and mix around in the pot with the large spoonful of butter, which should also stop them from sticking. In a small container, take remaining garlic puree and add salt and water to form a thick, garlicy paste. Drizzle garlic mixture over kopytka and enjoy.
